If you're looking for a delicious and nutritious meal, vegetable biryani is a great choice. This traditional Indian dish is made with fragrant basmati rice, aromatic spices, and a variety of vegetables. It's a perfect meal for vegetarians and vegans, and it's also gluten-free.

Here's how to cook vegetable biryani:

Ingredients:

  • 2 cups basmati rice
  • 2 cups mixed vegetables (carrots, peas, potatoes, cauliflower, etc.)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons ghee or oil
  • 1 cinnamon stick
  • 4 cardamom pods
  • 4 cloves
  • 1 bay leaf
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • Salt to taste
  • 4 cups water

Instructions:

  1. Rinse the rice in cold water until the water runs clear. Soak the rice in water for 20 minutes.
  2. In a large pot, heat the ghee or oil over medium heat. Add the cinnamon stick, cardamom pods, cloves, bay leaf, and cumin seeds. Fry for a few seconds until fragrant.
  3. Add the chopped onion, garlic, and ginger. Fry until the onion is soft and translucent.
  4. Add the mixed vegetables and fry for 5 minutes.
  5. Add the coriander powder, garam masala, turmeric powder, and salt. Fry for 2 minutes.
  6. Drain the rice and add it to the pot. Fry for 2 minutes.
  7. Add 4 cups of water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 20 minutes.
  8. Turn off the heat and let the biryani rest for 10 minutes.
