  2. In a large pot, heat the ghee or oil over medium heat. Add the cinnamon stick, cardamom pods, cloves, bay leaf, and cumin seeds. Fry for a few seconds until fragrant.
  3. Add the chopped onion, garlic, and ginger. Fry until the onion is soft and translucent.
  4. Add the mixed vegetables and fry for 5 minutes.
  5. Add the coriander powder, garam masala, turmeric powder, and salt. Fry for 2 minutes.
  6. Drain the rice and add it to the pot. Fry for 2 minutes.
  7. Add 4 cups of water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 20 minutes.
  8. Turn off the heat and let the biryani rest for 10 minutes.
  9. Fluff the rice with a fork and serve hot.
